🍭 ALMOND KORJIKI 🍭
Russian Milk Cookies

For this recipe, I made 2 different batches. One Almond flavor and the other batch, regular flavor. So I doubled it.
The recipe will be only for 1 batch, so if you like to make 2 different flavors? Then you have to double your recipe as I did.

INGREDIENTS...

This recipe is for 1 single batch.

Prepare all the measurements of the ingredients, before you start putting it together.

1stck of unsalted Butter / melted
⅓ cup of Milk
1 Tbs. Honey
2 Eggs - divided / 1 whole egg and the whites from the second Egg. You might also need 1 extrea egg yolk at the end, but start with 2 eggs for now. Save the EXTRA yolk for egg washing the cookies before baking.
¾ c of granulated white Sugar
⅓ c of Light Brown Sugar /firmly packed
½ tsp. Baking Soda
½ tsp. Vanilla Extract

DRY INGREDIENTS to be
sifted together.

3 cups of All Purpose Flour / 1/4 c extra if needed during the kneading.
1/2c Cornstarch
1 1/2 tsp. Baking Powder
1/2 tsp. Ground Clove
1 tsp. Ground Cinnamon
1/2 tsp. Salt

DIRECTIONS ...

Combine in a large bowl all the dry ingredients, stir and set aside.
NOW, sift all the dry ingredients mentioned above into another bowl.
Set aside.

In a thick none stick medium pot or in a heatproof bowl combine the melted butter, milk, 1 egg and the egg whites, both sugars the white and brown, the honey and mix to combine.
Place the bowl on the low fire on stove top, and keep on stirring untill the sugar dissolves and the mixture starts forming bubbles. DO NOT LEAVE IT UN ATTENDED!

Remove from the heat and add vanilla and baking soda, mix and start gradually adding it to the sifted flour you prepared.

Knead the dough into soft and non sticky dough. You might need extra flour mabe. Don't use too much. Roll open 1/4" in thickness. Cut out with a cookie cutter, then place I the baking tray. Egg wash the TOPS with 1 egg yolk + 1 Tbsp. Of water. Brush on TOPS then bake until nice rich golden brown.

Preheat the oven to 375°F

BAKE ABOUT 7 TO 12 MINUTES, OR TILL THE TOPS TURN RICH GOLDEN BROWN & BOTTOMS ARE PAIL GOLDEN BROWN.
