Armenian Stuffed Vegetable Stew

BAKED KOFTE STUFFED POTATOE CASSEROLE

INGREDIENTS:

KOFTE ...

1/2 pound Ground Beef
1 tsp. Dijon Mustard only!
Chili Powder / to taste
1 large Onion / chopped
1/4 c Cilantro
4 cloves of mashed Garlic for the filling/ The rest of garlic place on top.
We love garlic, so I used 2 small heads, peeled.
1/4 c Parsley / chopped

SEASONINGS ...

Turmeric
Aleppo Pepper / or Paprika
Cumin
Allspice
Lemon Pepper Seasoning / a must
Salt
Black Pepper
3 Tbsp. of the Pizza Sauce

Let it merrinade for 1 hour in refrigerator before using for tastier flavor.

VEGETABLES ...
.
4 long Peppers of any type / I used 2 semi chili Serrano Peppers and etc.
I don't use Bell Peppers in this dish at all. But up to you.
2 mini baby Peppers / 1 red - 1 orange
4 Potatoes/ cut in half long wise. Leave the skin on.
2 c of Shreted Cheese of your choice / divided in two parts.
Parmesan Cheese/ as much as you like
2 bags of Fresh Spinach Leaves
1 - 17.46 oz. jar or can of ready made Pizza Sauce /or 500 gr.
8 oz. Tomato 🍅 Sauce
1/2 can water
Olive Oil for sautéing

Preparation ...
.
Begin by chopping the onions and garlic and set aside.
.
Now wash and cut your vegetables in half, and begin taking the insides out of your cut eggplant, potatoes and removing the seeds from the inside of the peppers.
Make sure you do not take too much out, we need to have some of the flesh left from the vegetables.
.
Start to chop in small pieces in insides of the veggies you just took out.

Place on fire your frying pan and add 2 tablespoons or more of olive oil.
First put in your chopped garlic and sauté for about a minute on medium heat, then add in your chopped onions.
Sautee together another minute, then add in the chopped veggies.
Add to taste salt, black pepper, lemon pepper seasoning.
Sauté until half way cooked. About 3 to 5 minutes. Cool it off a little and mix it in with the seasoned meat.

Stuff your veggies.

In the baking pan, cover the bottom with half of your Pizza sauce. Lair on top the spinach leaves. Sprinkle with the shreted cheese, and place the stuffed veggies on top.

YOU HAVE 2 OPPTIONS ...
You can leave it as is , by sprinkling the rest of cheese on top, and cocering it with foil and baking it /or continue with the rest of the steps.

Continuing Steps ...

Throw the garlic cloves on top, then put the rest of the pizza sauce and the tomatoe sauce on top. Add 1/2 can of the tomato sauce and bake on 450F between 25 minutes to 40 minutes, or until sauce has thickened.
